TERROIR

Our vineyards are located at an altitude of 700m above sea level. We have a continental climate with a very strong Mediterranean influence due to its proximity to the sea, where the average annual temperature is 14ºC, with an annual thermal amplitude of more than 17º. This thermal range is what gives the climate of Utiel-Requena its special characteristics. It has low rainfall, between 400-500 l/m2 annually. All these characteristics give our wine such a unique personality, allowing our grapes to ripen slowly and achieve their optimal concentration of aromas.

Mediterranean White

Complete destemming and partial crushing with a significant proportion of whole berries. The grapes are pressed and the must is left to decant for 24 hours, then racked and fermented at 15-18ºC, using selected yeasts. Clarification and filtration precede cold stabilization.
