To produce our red wines, we mainly use Tempranillo from vineyards located near the Sierra de Yerga mountains, within the Cervera region, at an average altitude of 700m, in areas such as Rincón de Olivedo or Grávalos. For red wines intended for barrel aging, we use grapes from vineyards in the Cabretón area, known for their high altitude, which yield grapes with excellent acidity and great longevity. Our Garnacha largely comes from Rioja Alta, where we work with vineyards in the Nájera region, near Alesanco, from which we obtain late-ripening grapes under cool conditions.

| Tasting notes | Cherry red color with garnet hues. Very attractive nose, with a subtle touch of wood and elegant aromas of red fruits. On the palate it is a very harmonious wine, with a soft and delicate taste, in perfect balance between fruit and light wood. |
| Vinification | With different ripening rates and harvested at their optimal moment, each variety is processed separately. Upon arrival at the winery, the grapes are destemmed, largely retaining whole berries. Next, controlled fermentation begins at a temperature between 24 and 28ºC in stainless steel tanks with native and selected yeasts. After the 10-15 day maceration process, malolactic fermentation begins. |
