TERROIR

To produce our red wines, we mainly use Tempranillo from vineyards located near the Sierra de Yerga mountains, within the Cervera region, at an average altitude of 700m, in areas such as Rincón de Olivedo or Grávalos. For red wines intended for barrel aging, we use grapes from vineyards in the Cabretón area, known for their high altitude, which yield grapes with excellent acidity and great longevity. Our Garnacha largely comes from Rioja Alta, where we work with vineyards in the Nájera region, near Alesanco, from which we obtain late-ripening grapes under cool conditions.

Bold and Purebred

With different ripening rhythms and harvested at their optimum moment, each variety is processed separately. Upon arrival at the winery, the grapes are destemmed, largely preserving the whole berries. Next, the controlled fermentation process begins at a temperature between 24 and 28ºC in stainless steel tanks with native and selected yeasts. After the 15-20 day maceration process is complete, malolactic fermentation begins.

Tasting notes Intense ruby red color. The nose is dominated by aromas of black fruits (blackberry, cassis) enveloped in smoky, spicy, and toasted notes. On the palate, we note that it presents elegant, mature, and silky tannins. With hints of licorice, vanilla, and coconut.
