Verdejo grapes harvested at night to preserve their freshness and prevent oxidation. After a gentle pressing, the must ferments in stainless steel tanks at a low temperature, using selected yeasts that enhance varietal expression. Once alcoholic fermentation is complete, the wine remains on its fine lees, with periodic bâtonnage to increase mouthfeel, improve unctuousness, and provide greater aromatic complexity, always maintaining its characteristic freshness.
