Terroir

Grape harvested in the Mendavia surrounding in plots located at an altitude between 300 and 600 meters. The vineyards have the perfect balance to allow harvesting the grapes at its best ripening stage. The low yields per hectare allow us to obtain a concentrated and aromatic wine.

WINE MAKING PROCESS

Selected, de-stemmed and partially crushed grapes, with a high proportion of full berries and a maceration period of 15 to 20 days with daily over-pumpings. Controlled fermentation in stainless steel tanks at 23 – 26º C.

Ageing: Two years in American and French Oak barrel and ageing in bottle.

Appearance : Intense garnet with terracotta hints.
Nose : Aromatic and spicy wine with smoked touches and forest fruit aroma, ripe strawberries, plum, black cherry and hints of coconut.
Taste : Round and strong on the mouth with strong tannins. Long, round and complex aftertaste.
Temperature : Serve at 16 to 18ºC
Pairing : Game, stews, chocolate with lots of cocoa, turkey, pork, morel, grilled vegetables and spicy Asian dishes.

Team led by Rodrigo Espinosa, Agricultural Engineer and Oenologist by the University of Chile, with wide experience in Chile, The United States and Castilla La Mancha.
