Terroir

Grape harvested in the Mendavia surrounding in plots located at an altitude between 300 and 600 meters. The vineyards have the perfect balance to allow harvesting the grapes at its best ripening stage. The low yields per hectare allow us to obtain a concentrated and aromatic wine.

WINE MAKING PROCESS

De-stemmed and partially crushed grapes with a high proportion of full berries. 10 – 15 days maceration period with daily over-pumpings. Controlled fermentation in stainless steel tanks at 24 – 28º C. Selected yeasts to obtain the maximum potential out of the fruit

Appearance : Nice red violet colour with high intensity.
Temperature : Serve at 14 to 16º C
Aroma : Strong red fruity hints with elegance notes of liquorice.
Pairing : Ideal for pasta, red and white meat and soft cheeses.
Taste : Balanced on the palate and with a long and elegant fruity aftertaste. Perfect balance between freshness and acidity.

Team led by Rodrigo Espinosa, Agricultural Engineer and Oenologist by the University of Chile, with wide experience in Chile, The United States and Castilla La Mancha.
